Dallas has seen the dawn of champagne bars, martini lounges and halls o' beer. Now it's time for an Eastern influence in the guise of Tei Tei Robata Bar's soon-to-be added sake bar.

The already-packed restaurant (which is owned by Teppo's Teiichi Sakurai) will open a cocktail addition in the space next door by the end of October.
  "We'll have a little hole in the wall connecting the two that people will have to squeeze through. It's very secretive; then you're in a whole different room," says Teiichi. "We'll have a bunch of nice sake and upscale drinks like sake martinis."

For those who aren't versed in the fine points of sake, Teiichi will carry more than 30 varieties, along with one very special brand called Kubota, which sells for a cool $300 a bottle. "In Japan, it's very hard to find, and it sells for $25 a glass. A lot of customers buy a big bottle and put their names on it."

Teiichi says the same intimate feel of Tei Tei (which translates to "little castle") will carry over to the sake bar. "You have to keep the same tone. I don't believe in big restaurants because there's no passion. When you invite friends over, you're entertaining and that's what restaurants are all about."

"Like the kind of sake I'll have - you have to enjoy and sip slowly. You don't get crazy with it. It's like cigars - there's one you smoke on the golf course and one you sit down with cognac and sip."
